The other night I ventured into my own personal bacon haven to create a twist on a traditional recipe.

I found the original recipe here, and, after studying it, made my own adjustments.

This particular BBQ-Bacon Wrapped Meatloaf recipe is pretty simple to make – as long as you follow the directions. I chose to change up the ground beef and use a pork/beef mixture. Also, making your own homemade BBQ sauce is always a plus.

One criticism I have for this recipe is that it requires more bacon than stated. I used a full package of bacon (8 pieces- be sure to get the regular cut, not the thick sliced). I plan to do some fancy lattice work on my next one. More bacon definitely makes this meatloaf recipe the ultimate dish for meat lovers.

In addition, I wanted to add some cayenne and other spices. It’s important for you to be able to adjust the recipe to your taste without comprising the end result too much.

All in all, I give it a 8 out of 10 for the skill level needed to complete this recipe because of the low preparation time, lack of difficult techniques and the ability for someone to customize it using additional spices or meats.

What to serve on the side: Garlic Mashed Potatoes and Brown Gravy
Veggie: Steamed Green Beans with a pinch of garlic salt and sprinkle of olive oil

  • 8 slices bacon
  • 1 red onion
  • 3 cloves garlic, finely chopped
  • ½ lb. lean ground beef
  • ½ lb. ground pork
  • (or another option - ⅓ lb. beef, pork, veal)
  • ½ cup homemade barbeque sauce
  • ½ cup seasoned panko bread crumbs
  • 2 eggs, beaten
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon honey mustard
  • 1 teaspoon dried oregano
  • ½ teaspoon chili powder
  • ½ teaspoon red pepper flakes
  • ½ teaspoon cayenne pepper
